Pepper Mayo

This is a great spread for any sandwich (I am embarrassed to admit I could probably eat it right out of the container with a spoon cause it is that good)!!!
Ingredients
1/4 cup light mayonnaise
1 Tablespoon Splenda
1/2 teaspoon black pepper (more or less to taste)

Directions
Place all ingredients into a bowl and mix well.  Cover and refrigerate for at least one hour before serving.

Serving Size: 1 table spoon

Pico De Gallo

I created this recipe because I love Pico de Gallo but because I dislike raw onions and peppers I thought this was a recipe I could improve on. This recipe is really good. I really enjoyed the balance of sweet and spicy. Steaming the peppers and onions really brought out their sweet flavors. I could eat this recipe by the spoonful.

Ingredients

3- 4 diced tomatoes (aprox. 4 cups)

1 finely chopped white onion

1 cup fresh chopped cilantro

2 finely chopped banana peppers (or any in season sweet pepper)

1 finely chopped green bell pepper

1 finely chopped Cu banelle pepper (or any in season sweet pepper)

1 lime, zest and juice

1 teaspoon sugar

fresh cracked pepper to taste


Directions

Dice onion, banana peppers, green bell pepper, and cubanelle pepper. Once diced place into a microwave steamer and place in the microwave for 5 minutes or until onions and peppers are slightly cooked. Remove and let cool.

In a large bowl mix onions and peppers with the remaining ingredients.

Stir well and chill approximately 30 minutes before serving.

Recipe makes 14 servings

Asian Style Spicy Peanut Vinaigrette

Trader Joe's Asian Style Spicy Peanut Vinaigrette with Jalapeno & Fresh Cilantro is by far the best salad dressing I have ever purchased. I need to thank my mom for introducing me to this delicious find. This dressing has so much flavor, at times I have been tempted to lick the bowl. A salad with this dressing really doesn't need anything else but the lettuce making it a great low calorie option for a filling snack of meal. This dressing is also great as a marinade, a dipping sauce, or a stir fry sauce. As soon as my bottle gets low I have to make sure I have a replacement in the fridge.Serving Size: 2 Tbsp.
